Restaurant Openings & Operational Improvements
Menu Planning, Systems & Team Performance
Choose your starting point
Opening, improving and growing require different questions. Start with the one that matches the decision in front of you.
Turn an idea into an executable restaurant.
Clarify the concept, test critical assumptions and build a coordinated path toward opening.
Find where profit and operational performance are leaking.
Connect financial symptoms to purchasing, labor, menu, workflow and management priorities.
Build the systems required to operate multiple locations.
Assess readiness and strengthen reporting, standards and leadership before complexity multiplies.
The operating system
A restaurant is one connected system. Looking at a single percentage without the behavior behind it rarely solves the problem.

What we work on
Practical analysis, systems and coaching—built around how restaurants actually operate.
Pressure-test the idea, guest, market, check average and revenue model before the expensive decisions begin.
Turn a viable concept into an opening plan your team, vendors and professional partners can execute.
Know what every item contributes—not merely what it costs or how often it sells.
Create practical systems for prep, purchasing, inventory, scheduling, service and daily controls.
Trace margin leakage across the P&L and the operation, then prioritize the moves that matter.
Give managers and teams clear standards, useful tools and consistent accountability.
Build the reporting, leadership and operating systems a second location will demand.
Identify operational, documentation and transferability gaps before formally listing a restaurant for sale.

2-minute checkup
A quick educational snapshot—not a diagnosis, benchmark or guarantee.
Owner exit readiness
Before you list, find out what a buyer may see—and what needs to be systemized.
Focused paid diagnostic
We review the operation, identify apparent gaps in systems, records and transferability, and outline what should be addressed before listing. If you want help fixing those issues, DJP can provide a separate proposal.
The assessment is onsite within DJP’s Western New York service area. Contact us first to discuss whether a remote initial review is appropriate.
Schedule My Pre-Listing AssessmentA buyer is not only buying today’s revenue. They are evaluating whether the restaurant can operate after the current owner leaves. Strong transferability is built through clear systems, documented recipes, reliable records, trained people and fewer owner-only processes.
The leverage of better operations
Buyers may evaluate a restaurant partly on normalized, sustainable earnings and confidence that those earnings can continue after the owner leaves. Systemization can matter twice: first by improving current earnings, and again by making those earnings more transferable and credible.
$20,000 additional sustainable annual earnings
$40,000–$80,000
illustrative implied value
$50,000 additional sustainable annual earnings
$100,000–$200,000
illustrative implied value
Arithmetic illustration only—not a valuation opinion or statement of current market multiples. Improvements must be real, repeatable, documented and credible. Actual value depends on the business, records, market, buyer, deal structure and qualified advisors.
What the $199 assessment produces
A practical review of what appears organized, missing or undocumented; a concise priority summary; and a conversation about what to address first. Corrective work is not included.
Refinancing and loan readiness
Cleaner records, documented cash flow, dependable systems and less owner dependency may support a more credible lender conversation. Lenders separately consider historical performance, debt-service capacity, documentation, collateral and other underwriting factors.
DJP provides operational sale-readiness consulting—not a valuation, appraisal, brokerage opinion, loan advice, legal review, tax engagement or accounting engagement. Licensed and qualified professionals should advise on those matters.
The operator’s perspective
Thirty-five years in hospitality and food and beverage, including hands-on work opening and improving operations across dozens of restaurants.
